Capers are in fact the floral buds of the caper shrub, picked just before they open. They come in several sizes, each having its own flavour. The capers used by great chefs in gourmet dishes are often the smaller ones, called “nonpareil.” At Chef LELARGE we have taken care to select that same type of caper, hence their more delicate flavour and their pronounced fragrance. Our capers originate from Morocco, a country recognized for the quality of its caper bushes.
